I am SO excited about these peanut butter cookie bars. I've been on the hunt for the perfect recipe for these yummy brownie/cookie things just like my Lunch lady and Mom used to make. I bet I've tried 3 or 4 different recipes this year but they just didn't taste how I remembered.
This week I cleaned out my pantry and found an old recipe paper from my Mom's that had Peanut butter bars. Perfection!
1 cup butter
1 cup brown sugar
1 cup sugar
2 eggs
1 tsp vanilla
1 cup brown sugar
1 cup sugar
2 eggs
1 tsp vanilla
Cream Together
Stir in:
1 1/2 to 2 cups flour
1 tsp Baking Powder
2 cups quick oatmeal (I used regular and they tasted great)
Press into large cookie sheet and Bake at 350 for 10-15 minutes, until golden brown.
Spread 1 cup peanut butter over cookies while they are still warm.
Cool completely (this was the hardest part)
Frosting:
1/2 cup butter
1/2 cup milk
Melted together
Stir in 1 pkg powdered sugar and 1/2 cup cocoa.
Spread frosting on bars.
Enjoy!
